RAW VEGAN CHOCOLATE ALMOND CHEESECAKE MADE WITH ZEN ORGANICS SECOND HARVEST ORGANIC MATCHA AND ZENORGANICS MATCHA CHOCOLATE ).

INGREDIENTS

Crust1 cup raw whole almonds (150 g)2 tablespoons raw cacao powder or Zenorganics Matcha cocoa powder (14 g)1 teaspoon coconut sugar and a pinch of fine sea salt
2 tablespoons pure maple syrup (30 mL) amd 1/4 teaspoon vanilla extract.

Filling

1 1/2 cups raw cashews (235 g), use a scale for accurate results, soaked overnight if don't have a Vitamix)1/4 cup + 2 tablespoons water1 tablespoon fresh lemon juice1/4 cup + 1 tablespoon pure maple syrup (75 mL)1/2 tablespoon vanilla extract 1/4 teaspoon fine sea salt 2 tablespoons coconut sugar (20 g)1/4 cup raw cacao powder or cocoa powder (30 g)90 g raw cocoa butter (I used these discs b/c no chopping, so easy to use, you must use a scale for accurate results, you should have 1/4 cup + 2 tablespoons melted cocoa butter)

This cake has a wonderful, rich velvety chocolate texture and flavor. There is only 1 tablespoon lemon juice, a very slight tang, to really allow the chocolate flavor to be the star and not overpowered. It is not overly sweet, as I really wanted to bring out the chocolate flavor. If you taste the batter after blending and want it sweeter, add 1-2 tablespoons more of the coconut sugar, not the syrup, as you don't want to add extra liquid or it will affect the texture.

INSTRUCTIONS

I did not soak my cashews at all, but if you do not have a high-powered blender like a Vitamix, then you must soak your cashews overnight. This mixture is very thick and you will have major trouble getting it smooth otherwise. A regular blender is not likely to work, but a strong food processor should, as long as you soak them overnight. After soaking, drain and rinse and set aside.You will need a 6 inch round springform pan for this cake. Add a piece of parchment paper on the bottom of the pan inbetween the two pieces of the pan. I very lightly greased the insides just for easy removal later.Prepare the crust by adding the almonds, cocoa, sugar and salt to a food processor and process until it is a fine meal texture, about 30 seconds. Add the syrup and vanilla and process again just until it comes together in a chunky ball. Press the mixture into the prepared springform pan, making sure it's flat and even around the edges. Set aside.For the filling, make sure to go in this order. Add the cashews, water, lemon juice, syrup and vanilla to your vitamix or food processor. Process, starting on slow at first and work your way up to high speed until it's completely smooth. It will be very thick and you may need to scrape the sides once, but make sure it's totally smooth before adding the dry ingredients! Once totally smooth, add the salt, sugar and cocoa powder and slightly stir it into the mix. Don't blend yet, it will be too thick.Melt your cocoa butter in the microwave or over a double boiler. For 100% raw, put the cocoa butter in a bowl over a bowl of boiling water and let it melt. If doing in the microwave, heat it in 30 second intervals, up to 2 minutes stirring in between. Once it's almost all melted, remove and stir until it's 100% dissolved. 90 g will yield exactly 1/4 cup + 2 tablespoons melted cocoa butter, which is exactly what you need for the cake to firm up. Pour into the blender and process until completely smooth. It will be VERY thick like a pudding. Do your best to stir with a spoon to loosen and blend again, just to make sure it is all mixed and smooth. Taste and if you want it sweeter, add 1-2 tablespoons of coconut sugar and not the syrup, you don't want extra liquid. Pour over your crust and smooth the top with a spoon. Make sure to scrape out all that chocolatey goodness from the blender, it is very thick.Place in the freezer for several hours until set. I left mine in overnight. Or you can place in the fridge to set, but it will take much longer. If you freeze it overnight, remove it around 20 minutes before serving and it is the perfect firm, smooth texture. Once it has fully set from the freezer, keep it stored in the fridge and then it will always be the perfect texture to eat immediately from the fridge. Just wait until you take a bite! Garnish with chopped chocolate and raspberries, if desired!

Abstract:
The chemopreventive effects of curcumin and green tea catechins individually and in combination on 1,2-dimethylhydrazine (DMH)-induced colon carcinogenesis were studied in male Wister rats following 32 weeks of dietary treatment. The incidence, number and size of colorectal cancer were measured. Colorectal aberrant crypt foci (ACF) were analyzed by methylene blue staining. Proliferation indices and apoptotic indices were determined by PCNA immunostaining and TUNEL assay, respectively. The results showed that dietary curcumin, catechins and combination administration significantly inhibited the total number of ACF per rat. The combination treatment displayed the most potent inhibitory effect, while there was no difference of inhibition between curcumin and catechins-treated groups. The incidence of colorectal cancer in the treated groups was significantly lower than that of positive control group. Compared with the positive control group, the proliferation index was significantly decreased and the apoptotic index was significantly increased in all treatment groups, while the effect of the combination was the greatest among the treated groups. Our findings suggest that the combination of curcumin and catechins may produce a synergistic colon cancer-preventative effect that would be more potent than each of the compounds alone.

Matcha tea may well be the healthiest drink on the planet. For many, the tea and its extracts hold great promise as potential treatments for cancer. But scientists had never identified how green tea helps reduce the risk of cancer.

Now researchers from Los Angeles Biomedical Research Institute at Harbor-UCLA Medical Center have figured out how green tea works.

In a study published online by the journal Metabolomics[i] they explain how an active constituent in green tea changes the metabolism of cancer cells.

The researchers found that epigallocatechin gallate (EGCG), a powerful antioxidant found in green tea, affects enzymes critical to the metabolism of pancreatic cancer cells.

Pancreatic cancer displays an elevated expression of the critical enzyme lactate dehydrogenase A (LDHA). Other human cancers also show elevated LDHA activity.

The researchers found EGCG inhibited LDHA and disrupted the cellular metabolic network of the cancer.

They concluded that EGCG reduced the risk of cancer by suppressing the activity of LDHA and disrupting the metabolic functions in the cancer cells.

The researchers believe using foods to alter cellular metabolism can have an impact on cancer. One of the authors, Wai-Nang Lee, MD, said:

"By explaining how green tea's active component could prevent cancer, this study will open the door to a whole new area of cancer research and help us understand how other foods can prevent cancer or slow the growth of cancerous cells."
Earlier studies had shown that EGCG can induce programmed cell death in pancreatic cancer.

Other studies show EGCG:

inhibits proliferation of triple negative breast cancer cells
inhibits the growth of human cervical cancer cell lines
interferes with androgen-independent prostate cancer
exhibits inhibitory activity against colorectal cancer cells.
By far the richest food source of EGCG is green tea. But make sure your drink the real stuff. The decaffeinated version contains much less EGCG. But the caffeine in green tea is fairly mild. One cup contains only about 20 milligrams of caffeine, compared to about 80 milligrams in a cup of coffee.

Other foods also contain lesser amounts of EGCG. In 2007 the USDA issued a report on the flavonoid content of certain foods. It found that apples are also rich in EGCG. Fuji apples were the best of the apple varieties tested. They contain up to 6.26 mg of EGCG per 100 g of apple.

Raw blackberries are another good source offering over 7 mg of EGCG per 100 grams. Red wine and chocolate also contain good amounts. Other foods containing trace amounts of EGCG include strawberries, peanuts, peaches, avocados, plums, onions and raspberries.

Besides cancer green tea may help prevent and perhaps even treat neurodegenerative disorders such as Alzheimer's, Parkinson's and Huntington's disease.

Matcha almond Butter Protein bar

And the best part is that this fudge really is good for you! It’s naturally sweetened, chock full of healthy fats, and contains a pretty decent dose of protein. It’s also gluten-free, grain-free, easily made vegan, and can even be lightened up if you do so wish. The lightened up version isn’t quite as creamy or fudgy as the original — more like a dough than a fudge — but it’s still tastes oh.so.good. Especially if you decide to add some chocolate on top (which I -highly- recommend).

So show your almond butter some love and whip up a batch of this delicious protein fudge! You only need 5 ingredients and 30 minutes!

Almond Butter Protein Fudge -- Naturally sweetened 5-ingredient fudge

Ingredients
1/2 cup vanilla flavoured protein powder*
2 Tbsp. coconut flour
1 tbsp of zen organics Matcha
1/2 cup creamy almond butter**
4 Tbsp. coconut oil***
2 Tbsp. maple syrup
2-3 Tbsp. chocolate chips,

Directions
In a medium-sized mixing bowl, combine protein powder, matcha and coconut flour. Mix until well combined and set aside.
In a small pan over medium-low heat, add almond butter, coconut oil, and maple syrup, stirring until the almond butter is melted and the mixture becomes smooth. Remove from heat and pour into the dry mixture, stirring until everything is fully combined.
Line a medium-sized tupperware container**** with parchment paper and pour the mixture into it, using a spatula or your fingers to spread it out evenly and press it down firmly.
Place chocolate into a microwave safe bowl and nuke on high in 30 second intervals, mixing between each. When chocolate is fully melted, drizzle it over the top of the fudge using a spoon. Place container into the freezer until hardened, about 30 minutes.
Remove container from freezer and use the parchment paper to lift out the fudge. Use a sharp knife to cut into size of your choice and enjoy! Store in freezer and remove a few minutes before eating for best results.
Notes
* Use a plant based protein powder to make these vegan.
** You could easily sub this out with peanut butter if you prefer. Or use soy nut or sunflower seed butter to make these nut free.
*** To make these lighter, use 2 Tbsp. of coconut oil and 2 Tbsp. of almond milk.
**** The size of your container doesn't matter too much since it's really up to you how big/small you want.
